They say breakfast is the most important meal of the day — but out here in the mountains (or, let’s be honest, even on a lazy weekend at home), it’s also the most satisfying. The Mountain Man Breakfast is a hearty, skillet-style meal that fuels big adventures, long hikes, or just a second cup of coffee on the porch.

We’re talking golden potatoes, sizzling sausage, crisp bell peppers, and onions — all fried up and topped with fluffy scrambled eggs and melty cheddar cheese. It’s the kind of breakfast that fills the cabin with incredible smells and makes everyone gather around asking, “Is it ready yet?”

Whether you’re cooking this over a campfire, on a cast-iron skillet at the cabin, or just making your kitchen feel like a wilderness retreat, this one-pan wonder is the ultimate way to start the day strong (and full).

So fire up the skillet, crack those eggs, and let’s get cooking!

INGREDIENTS & SUPPLIES

  • Two (2) tablespoons oil divided
  • Half (1/2) pound Yukon gold potatoes cut into ¼”-½” cubes
  • One (1) green bell pepper diced
  • One (1) yellow onion diced
  • Half (1/2) teaspoon sea salt
  • Quarter (1/4) pound sausage about 6 links
  • Six (6) eggs
  • One (1) cup shredded cheddar cheese
  • Chopped green onions, ground black pepper, and hot sauce

PREP WORK

Cut up the vegetables & bacon, sausage links

Whisk the eggs thoroughly

COOKING

Heat a large skillet over medium heat and add 1 tablespoon of oil.

Add the potatoes and cook, turning them occasionally, until they begin to brown, about 10-15 minutes.

Add another tablespoon of oil and the green bell pepper. Saute for 5 minutes until beginning to soften

Add the onion and salt. Saute for about 5 minutes, until the onion is soft and beginning to take on color.

Add the sausage and cook until browned.

Once all the vegetables are soft and browned, lower the heat and push them to the sides of the pan.

Add a bit of oil to the center of the pan, then add the eggs and the shredded cheese to the skillet.  

Use your spatula to scramble the eggs until they set. Then, fold the vegetables back into the mix.

Remove from the heat and top with sliced green onions, cracked pepper, and hot sauce (optional).
